Hi guys, I'm an Asian player from Taiwan. I got DOA5U 2 days ago and have been looking at some changes in it.
Due to the fact that I don't have too much free time now, I'm only covering a few things in summary.
Throws
All characters' throws get buffed(except some of the characters' throws like Kasumi's 33T and Kokoro's 214T 4T 46T) in DOA5U, ESPECIALLY THE GRAPPLERS'.
I'm listing some of the damage caused by the most-damaging throws of some characters.
Throws that require players to do juggles after them and ESCAPABLE combo throws are not listed. (Such as Kasumi's 236T)
Strikers

Besides, in DOA5U, the input for "33" is stricter than it was in DOA5.
If you intend to use 33T, you have to press 33 fast enough or it will end up being either 3T or 2T.
Parries
Parries in DOA5U also receive some nerf.
: 0(18)12 -> 0(12)18
: 0(18)12 -> 0(15)15
: 0(13)23 -> 0(12)24
: Unchanged, still 0(18)22
Others
6p now executes in 12f, 6k in 13f, and Dragon Gunner in 23f.
1P+K no longer causes a guard break and she's at -3 on block. It caues guard break only when fully chaged, leaving her at +5.
H+K also no longer causes a guard break and she's at -3 on block.
KK : -5 on block
8K from Ongyion stance: -2 on block
6PPP, 3PP: -7 on block, low throw punishable.
System
Wall damage increased.
DOA5: 5 -> DOA5U 10 (Normal wall)
DOA5: 10 -> DOA5U 15 (Danger zone)
