Guard! Hold if you know exactly what attack they're going to use next. If they do a move with a long recovery, throw punish. You can't guard too long though, since they'll probably try to throw you. If you can see that coming or predict it, attack or crouch it.
1: We've all been there. The tutorial is OK, but nothing beats one on one. My thing is simple, find those players who use "your" characters really well, ask them to teach U or play U. Worst they can do is say "no", but I've found that when they say "yes" they're usually genuine.
